Ivy Tech Community College Bakery

Fort Wayne, Indiana

Elevatus Architecture completed a remodel of an existing unoccupied space to create a specialty bakery for the Culinary Arts department to expand the ever-growing program. Architectural work included demolition of existing classroom and offices, space planning and layout of new kitchen including workstation spaces and equipment coordination, storage, bulk food storage (perishable and non-perishable), office, and a public entrance.

Since this particular project was to be located in an existing space, the major challenge was allocation of the program within the constraints of the building, to ensure the owner’s requirements were met. While the use of the space is primarily for the Culinary Arts program, it also serves as a bakery for campus events held in the adjacent multipurpose room.

The layout of the program located the bakery proper on the south half of the existing space to allow visual connection between the corridor and bakery. Large glass doors and windows were installed in the corridor wall to the building occupants for visual cues of the new space. The remaining program was on the north half of the existing space to accommodate delivery and storage of goods. The design also accounted for food service from the existing kitchen, through the extra wide bakery hall connector and preparation space.
